This is a dish I have been working on and will be involved in a new tasting menu in some way, may not be as posted. It is an Avocado Torchon set atop puffed coconut rice, Herbs and vegetables from Motley Farms, a strawberry fluid gel, maldon, and good olive oil

Big fan of the restaurant. Does the name refer to the preperation of the avocado, or is there foie gras involved? Looks delicious. I was blown away by the pork belly and apples app at the restaurant.
It refers to the preparation, no foie…that would probably be a stretch anyway, glad you like our stuff. I am always glad to here my hard work pays off so thank you, let me know next time your in and i’ll make something special
